AmountIngredient
3 poundspork chops or spareribs
1onion, finely chopped
3 clovesgarlic, chopped
1/2 cuplemon juice
1/2 cupolive oil
1 teaspoondried oregano or mixed herbs
Salt and black pepper
Olives, parsley, and lemon wedges, for garnish

Preparation Instructions:

Place the pork in a shallow dish with the onion, garlic, lemon juice, olive oil, oregano, salt, and pepper. Turn to coat, then marinate for at least 3 hours at room temperature or overnight in the refrigerator. Prepare a charcoal fire or preheat a gas grill. remove the meat form the marinade and drain. Cook over medium hot coals for about 8 minutes, preferably covered, until browned on one side, then turn and cook the other side. Serve hot, sprinkled with salt and pepper and garnished with olives, parsley and lemon wedges.
