"Pea Cottage Cheese Soup"

Serving Size: Makes 6 servings

AmountIngredient
1medium potato, chopped (1 cup)
2 stalkscelery chopped (1 cup)
1medium onion, chopped (1/2 cup)
1/2 cupchicken broth
1/2 teaspoondried basil, crushed
1/4 teaspoonsalt
1/8 teaspoonpepper
2 cupscream style cottage cheese
8 ounce canpeas, drained
1 cupmilk

Preparation Instructions:

In 2 quart saucepan combine potato, celery, onion, chicken broth, basil, salt and pepper. Bring to boiling. Reduce heat; cover and simmer for 15 minutes or till vegetables are tender.

Meanwhile, in a blender container combine cottage cheese, peas, and milk; cover and blend till smooth. Stir into vegetables in saucepan; heat through. Makes 6 servings.
