"Apricot Coconut Balls"

Serving Size: Makes 2 dozen

AmountIngredient
1 cupdried apricots
1 cupflaked coconut
1/4 cupconfectioners' sugar
1 teaspoongrated orange rind
1 teaspoongrated lemon rind
1 tablespoonlemon juice
Granulated sugar

Preparation Instructions:

Put apricots and coconut through food grinder, using fine blade. Mix in confectioners' sugar, rinds, lemon juice. Form into small balls. Roll in granulated sugar. Let ripen in refrigerator at least a week before serving. Makes 2 dozen.
