"Bundled Up Corn"

Serving Size: Makes 4 servings

AmountIngredient
2 tablespoonsbutter or margarine, at room temperature
1 teaspoongrated lemon rind
1/4 teaspoon eachsalt and black pepper
4medium size fresh ears of corn, broken in half

Preparation Instructions:

Preheat the oven to 450 degrees. In a small bowl, stir together the butter, lemon rind, salt, and pepper. Pace 2 half ears of corn on a piece of heavy foil. Repeat with the remaining corn. Spread the corn with the butter mixture; wrap corn in the foil. Bake for 30 minutes or until corn is tender. Remove foil. To serve insert corn holders in the ends of each ear. Makes 4 servings.
