AmountIngredient
1 3/4 ouncespine nuts
9 1/2 ouncesall purpose flour
3 1/2 ouncessuperfine sugar
1/2 teaspoonbaking soda
Pinchsalt
3 ouncesunskinned almonds
2eggs, beaten
1egg, beaten with a little water

Preparation Instructions:

Preheat the oven to 350 degrees. Spread pine nuts on a baking sheet and toast them for 8 - 10 minutes. Put the flour, sugar, baking soda, and salt into a bowl. Finely chop the rosemary leaves and add to the dry ingredients along with the grated orange zest, almonds and toasted pine nuts. Combine the ingredients well. add the eggs and mix to a dough. Divide the dough into four and roll into thickish "sausages" on a lightly floured surface. Place on a greased baking sheet, brush with egg wash and bake for 2o minutes. Leave on sheet to cool. Cut at an angle into 1/2 inch wide slices. Brush the slices with the egg wash once again and bake at 300 degrees for a further 10 minutes.
