"Sausage, Pepper, and Potato Skillet"

Serving Size: Makes 4 servings

1 poundItalian style sausage, sliced 1 inch thick
1medium size yellow onion, cut into 1 inch cubes
1large sweet green pepper, cored, seeded and cut into 1 inch squares
1large sweet red pepper, cored, seeded and cut into 1 inch squares
1 1/4 poundssmall new potatoes, cut into 3/4 inch cubes
3/4 cupwater
1/8 teaspoonblack pepper

Preparation Instructions:

Brown the sausage on all sides in a deep 12 inch skillet over moderate heat - about 10 minutes. Drain off all but 2 tablespoons of the drippings. Stir in the onion, green and red peppers, potatoes, water, and black pepper. Reduce the heat to low, cover, and cook for 15 to 20 minutes or until the potatoes are tender. Serves 4.
