"Baked Beans with Ham and Maple Syrup"

Serving Size: Makes 4 servings

1 poundboneless precooked ham steak, cut into 1 inch cubes
2medium size carrots, peeled and sliced 1/4 inch thick
1/3 cupmaple syrup
1 tablespoonDijon mustard
2 cans (1 pound each)baked beans, drained
2 tablespoonsketchup
1/2 teaspoon eachdry mustard and chili powder
1/2 cupdry bread crumbs
1 tablespoonunsalted butter or margarine, melted

Preparation Instructions:

Place the ham in the center of an ungreased 11 x 9 x 2 inch microwave safe baking dish. Arrange the carrots in a single layer around the edge of the dish. Combine the maple syrup and Dijon mustard in a small dish, then pour over the ham and carrots. Cover with microwave safe plastic food wrap, vent by turning back one corner, and microwave on High for 8 minutes, stirring the carrots once midway. Mix the beans with the ketchup, dry mustard and chili powder in a large bowl, then spoon on top of the ham and carrots. Microwave, uncovered, on High for 8 minutes, stirring midway. Toss the bread crumbs with the butter in a small bowl, then sprinkle over the beans and microwave, uncovered, on High for another 2 minutes. Or, if you prefer, transfer to a preheated broiler and broil 4 inches from the heat for 1 minute or until tipped with brown. Serves 4.
