Linguine with Chicken in Peanut Sauce

Serving Size: Makes 4 servings

AmountIngredient
3boneless, skinless chicken breasts, sliced
2 - 3 tablespoonsvegetable oil
1 cupchicken stock
2 tablespoons eachliquid honey, soy sauce and cornstarch
1/4 cuppeanut butter
2 - 3green onions, chopped
1red pepper, cut into thin strips
500 g packagelinguine
Chopped fresh parsley, optional
Chopped peanuts, optional

Preparation Instructions:

Saute chicken in oil until golden. Remove and set aside. Combine stock, honey and soy sauce, whisk in cornstarch and peanut butter. Cook and stir until just thickened. Stir in onions, pepper and reserved chicken; heat through. Cook linguine according to package directions. Toss linguine with chicken mixture; top with parsley and peanuts, if desired. Serves 4.
