Salisbury Steak

AmountIngredient
11/2 poundsextra lean ground beef
1 cupfinely chopped onion
1/2 cupcooked rice (without salt or fat)
1/4 teaspoonpepper
1egg white
Vegetable cooking spray
1 3/4 cupssliced fresh mushrooms
2 tablespoonsWorcestershire sauce
1/2 teaspoonsalt
2 (13 3/4 ounce) cansno-salt-added beef broth
3 tablespoonswater
2 tablespoonscornstarch

Preparation Tips:

Combine first 5 ingredients in a bowl; stir well. Divide into 6 equal portions, shaping each into a 1 inch thick patty. Coat an electric skillet with cooking spray; heat to 320 degrees. Add patties, and cook 5 minutes on each side. Drain on paper towels; set aside and keep warm.
Wipe drippings from skillet with paper towel. Recoat skillet with cooking spray. Add mushrooms, and cook at 420 degrees for 10 minutes. Return patties to skillet. Cover, reduce heat, and simmer 15 minutes. Place patties on a platter, and keep warm. Combine water and cornstarch; add to broth mixture, stirring well. Bring mixture to a boil, and cook 1 minute. Serve over patties. 6 servings.
