"Cranberry Orange Relish"

Serving Size: Makes 12 - 14 servings

AmountIngredient
2oranges
8 cupsfresh cranberries
1 1/3 cupssugar
1/4 cupchopped crystallized ginger
1/2 cupchopped pecans, optional

Preparation Instructions:

Wash oranges. Squeeze juice from oranges; refrigerate juice in covered container for other use. Remove and discard pulp from orange peels. Cut peels in quarters; finely grind in food processor. Add half the cranberries and continue processing until finely round. Repeat with remaining cranberries. In large mixing bowl, combine ground cranberries sugar, and ginger; chill. Stir in pecans just before serving. Makes 12 to 14 servings.
