"Pineapple Chutney"

Serving Size: Makes about 6 cups

AmountIngredient
2 cans (20 oz each)crushed pineapple, drained and 1/2 cup juice reserved
1 1/2 cupsraisins
3/4 cupcider vinegar
2/3 cuppacked brown sugar
1/3 cupchopped green pepper
1/4 cupchopped onion
2 clovesgarlic, minced
2 tablespoonsfinely chopped crystallized ginger
1/2 teaspoonsalt
1/4 teaspoonground cinnamon
1/8 teaspoonground cloves
1/8 teaspooncayenne

Preparation Instructions:

Place pineapple and reserved liquid in 3 quart casserole. Combine with remaining ingredients. Cover and microwave at High for 10 minutes, stirring after 5 minutes. Uncover. Microwave at High for 15 to 20 minutes, or until desired consistency, stirring every 5 minutes. Chill. Serve as a relish with meat. Makes about 6 cups chutney.
