"Papaya Raspberry Crisp"

Serving Size: Makes 4 servings

AmountIngredient
2papayas (1 1/2 lbs total), peeled and cut into 1 in chunks
1 teaspoongrated lemon zest
2 tablespoonslemon juice
1/4 teaspoon eachsalt and pepper
1/8 teaspoonground allspice
3/4 cupraspberries
2 tablespoonsgranulated sugar
2 tablespoonspacked light brown sugar
1 tablespoonunsalted butter
3 tablespoonsflour

Preparation Instructions:

Preheat the oven to 450 degrees. In an 8 inch round ceramic or glass baking dish, toss together the papayas, lemon zest, lemon juice, salt, pepper, and allspice. Scatter the raspberries on top.

In a small bowl, combine the granulated sugar, brown sugar, and butter with your fingers. Mix in the flour until the mixture is crumbly. Sprinkle the crumb mixture over the fruit. Bake for 12 to 15 minutes or until the top is lightly browned and set and the fruit is heated through. Serves 4.
