"Anne's Potato Corn Chowder"

AmountIngredient
2 stalkscelery, chopped small
1carrot, chopped small
1medium onion, chopped small
Olive oil
Salt & pepper
A couple of tablespoonsflour
A littlewater
About 1 tablespoontaco seasoning mix
1 small canV-8 juice
1 cartonchicken broth
A small handfulrice
3medium potatoes, peeled and chopped small
1 small cangreen beans
1 small cancorn niblets
Salt & pepper
Paprika
Dried parsley

Preparation Instructions:

Stir fry celery, carrot, and onion in a little olive oil, salt and pepper. Add flour and stir till dissolved. Add water to make it thicken. Add taco seasoning mix and stir. Pour into slow cooker or dutch oven. Add V-8 juice. Add chicken broth and rice. Add potatoes. Add green beans and corn. Liquids from can included. Add salt, pepper, paprika and parsley. Taste and add more seasonings if needed. Simmer until potatoes are cooked. Serve with a big dollop of sour cream in the middle of the bowl. Serve taco chips instead of crackers or some hearty bread.
