Serving Size: Makes 12 bars

1/2 cupall purpose flour
1/2 teaspoonbaking powder
1/2 teaspoonground cinnamon
1/4 teaspoonsalt
1 1/2 cupschopped mixed dried fruit (apricots, cranberries, dates, etc.)
1 cupquick cooking oatmeal
1/3 cupchopped peanuts
6eggs
2/3 cuppacked brown sugar
1/2 cupchunky style peanut butter
1 teaspoonvanilla

Preparation Instructions:

Preheat oven to 350 degrees. Spray a 9 x 9 x 2 inch baking pan with cooking spray; set aside. Combine flour, baking powder, cinnamon and salt in a medium bowl. Stir in dried fruit, oatmeal and peanuts; set aside. Beat together eggs,brown sugar, peanut butter, and vanilla in large bowl until smooth. Stir in flour mixture. Pour into prepared pan. Bake in oven until toothpick inserted in center comes out clean, about 20 to 25 minutes. Cool on wire rack. Cut into 12 bars.

Per serving: 259 calories; 10 g fat; 37 g carbohydrates; 2 g fibre; 8 g protein; 160 mg sodium.
