Berry Jam

AmountIngredient
3 cupsblueberries, pureed
3 cupscherries, pureed
2 cupsraspberries, pureed
3/4 cupapple juice
4 tablespoons + 1 1/2 teaspoonslemon juice
1 cup + 2 tablespoonshoney

Preparation Tips:

Combine berries and juices in an 8 quart stainless-steel or enamel saucepan. Place over high heat and stir until mixture comes to a boil. Add honey and continue stirring.

When mixture comes to a full boil, begin timing for approximately 25 minutes. Jam is ready when it resembles thick, sticky syrup.

Pour into hot, scalded half-pint jars, leaving 1/4 inch of headspace. Process in a boiling-water bath for 10 minutes.
