"Cinnamon Rice Pudding with Dried Fruits"

Serving Size: Makes 4 servings

AmountIngredient
3 cupsvanilla soy beverage
1/3 cuparborio or short grain rice
1/3 cuppacked brown sugar
1 stickcinnamon, or 1/2 tsp ground
Pinchgrated nutmeg
1/2 cupchopped dried fruit (apples, apricots, prunes, pears)

Preparation Instructions:

In large heavy saucepan, combine soy beverage, rice, brown sugar, cinnamon and nutmeg; bring to a boil. Reduce heat, cover and simmer, stirring occasionally, for about 30 minutes or until rice is tender.

Stir in dried fruit; cook for 2 minutes or until fruit is softened.

Remove from heat and let stand at room temperature for about 3 hours or until thickened. Reheat to serve, if desired. Makes 4 servings.

Per serving: about 229 calories; 7 g protein; 4 g fat; 45 g carbohydrates; 2 g fibre; 0 mg cholesterol; 28 mg sodium.
