Easy Lemon-Blueberry Muffins

AmountIngredient
1 cupfresh or frozen blueberries
1beaten egg
2 cupsbiscuit mix
1/3 cupsugar
2 tablespoonsbutter or margarine, softened
1lemon
 Milk
 Melted butter or margarine
2 tablespoonssugar

Preparation Tips:

Thaw blueberries, if frozen; drain. In mixing bowl combine egg, biscuit mix , 1/3 cup sugar, and 2 tablespoons softened butter or margarine. Finely shred enough peel from lemon to make 1 tablespoon; set aside. Squeeze lemon; add enough milk to lemon juice to make 2/3 cup liquid. Add to biscuit-mix mixture; mix well. Gently fold in blueberries. Fill greased or paper-bake-cup-lined muffin cups 2/3 full.
Bake in 400 degree oven about 25 minutes. While warm, dip muffin tops in some melted butter or margarine, then in a mixture of 2 tablespoons sugar and reserved lemon peel. Makes 12 muffins.
