Shrimp and Okra Gumbo

AmountIngredient
1/4 cupcooking oil
1/4 cupall-purpose flour
1 cupchopped onion
1 cupchopped celery
1/2 cupchopped green pepper
2 clovesgarlic, minced
28 ounce cantomatoes, cut up
10 ounce packagefrozen cut okra, thawed
3/4 cupwater
1 tablespooninstant chicken bouillon>
1 tablespoonWorcestershire sauce
1 teaspooncayenne
1 teaspoondried thyme, crushed
1/2 teaspoonsalt
1/2 teaspoonground allspice
2bay leaves
1 poundfresh or frozen shelled shrimp
1/2 pintshucked oysters, cut up
1/4 cupsnipped parsley
 Hot cooked rice

Preparation Tips:

For roux, in large saucepan or dutch oven mix oil and flour. Cook, stirring often, over medium-low heat for 15 minutes or till roux is dark brown. Stir in onion, celery, green pepper, and garlic; cook till vegetables are just tender. Stir in undrained tomatoes, okra, water, bouillon granules, Worcestershire sauce, cayenne, thyme, salt, allspice, and bay leaves. Bring to boiling; reduce heat. Cover; simmer about 20 minutes. Remove bay leaves. Stir in shrimp, oysters, and parsley. Bring to boiling; reduce heat. Cover; simmer for 5 minutes. Serve over hot cooked rice in soup plates. Pass file powder and bottled hot pepper sauce, if desired. Makes 6 servings.
