3 Cheese Crustless Quiche

Serving Size: Makes 6 servings

AmountIngredient
2plum tomatoes
2/3 cuplight ricotta cheese
3/4 cupBreak Free Omega 3 Liquid Eggs, well shaken
3/4 cupshredded cheddar cheese
1/2 cupgrated Parmesan cheese
2 tablespoonschopped green onions
2 tablespoonschopped fresh basil, (or 1/2 tsp dried)
1/4 teaspoon eachsalt and pepper

Preparation Instructions:

Slice tomatoes thinly; drain on paper towel. Process ricotta cheese in food processor until smooth. Add liquid eggs, cheddar cheese, 1/3 cup of the Parmesan, onion, half of the basil, salt and pepper; process until well blended. Pour into 9 inch pie plate sprayed with non stick cooking spray. Arrange tomato slices on top; sprinkle with remaining Parmesan. Bake in 350 degree oven 35 minutes or until set. Sprinkle with remaining basil. Makes 6 servings.
