Eggs & Cheese
Serving Size: Makes 6 servings

Preparation Instructions:Slice tomatoes thinly; drain on paper towel. Process ricotta cheese in food processor until smooth. Add liquid eggs, cheddar cheese, 1/3 cup of the Parmesan, onion, half of the basil, salt and pepper; process until well blended. Pour into 9 inch pie plate sprayed with non stick cooking spray. Arrange tomato slices on top; sprinkle with remaining Parmesan. Bake in 350 degree oven 35 minutes or until set. Sprinkle with remaining basil. Makes 6 servings.
