"Cauliflower Mash"

Serving Size: Makes 4 servings

AmountIngredient
1 headcauliflower, cut into florets
2 clovesgarlic, cut into quarters
1/2 cup2% milk
2 teaspoonsfinely chopped fresh thyme or 1/2 tsp dried
2 tablespoonsfinely grated Parmesan cheese
Salt and pepper, to taste

Preparation Instructions:

Place cauliflower, garlic and milk in a saucepan. Bring to a boil. Cover and reduce heat. Simmer for 15 to 17 minutes or until cauliflower is tender. Transfer cauliflower and garlic to a bowl using a slotted spoon, reserving the hot milk.

Mash cauliflower with a potato masher or fork. Add 3 to 4 tablespoons of the hot milk. For a smoother mash, puree cauliflower, garlic and 3 to 4 tablespoons of the hot milk in a food processor. Stir in thyme, Parmesan and salt and pepper to taste.
