Chocolate-Coconut Slices

2 ounces (2 squares)unsweetened chocolate or pre-melted unsweetened chocolate product
3 ounce packagecream cheese, softened
1/3 cupsugar
1 teaspoonvanilla
1 cupflaked coconut
1/2 cupfinely chopped nuts
1 1/2 cupsall-purpose flour
1/2 teaspoonbaking soda
1/2 teaspoonsalt
1/3 cupbutter or margarine
1 cupsifted powdered sugar
1egg
1 teaspoonvanilla

Preparation Tips:

If using unsweetened chocolate squares, melt chocolate; cool. For the filling, in a small mixer bowl beat cream cheese, sugar, and 1 teaspoon vanilla on medium speed of electric mixer till smooth. Stir in coconut and finely chopped nuts. Cover and chill.
For the dough, in a small mixing bowl stir together flour, baking soda, and salt. In a large mixer bowl beat butter or margarine on medium speed of electric mixer for 30 seconds. Add powdered sugar, beating till well combined. Beat in egg, 1 teaspoon vanilla, and melted chocolate. Add dry ingredients, beating till well combined. Cover and chill dough about 30 minutes.
Between 2 pieces of waxed paper, roll dough into a 14 x 4 1/2 inch rectangle. Remove the top piece of waxed paper. Shape the coconut filling into a 14 inch long roll; place filling on dough. Roll dough around filling, removing bottom piece of waxed paper; seal edge of dough. Wrap rolled dough and filling in waxed paper; chill several hours or overnight. Before baking, cut dough into 1/4 inch slices. Place slices on a greased cookie sheet. Bake in a 375 degree oven for 8 to 10 minutes or till edges of cookies are firm and slightly browned. Cool about 1 minute; remove from cookie sheet. Cool on a wire rack. Makes about 48 cookies.
