"Asian Pork Omelette"

Serving Size: Makes 4 servings

AmountIngredient
8eggs
1/3 cupthinly sliced green onion
1 tablespoonfinely chopped ginger
1 tablespoonlower sodium soy sauce
Pinch eachsalt and freshly ground pepper
2 teaspoonspeanut or vegetable oil
2 stalkscelery, finely chopped
4cooked pork chops, chopped
2 tablespoonsoyster sauce, warmed

Preparation Instructions:

Whisk eggs, onion, ginger, soy sauce, salt and pepper in a medium bowl; set aside. Heat a large nonstick frying pan over medium high heat. Add oil then celery and pork. Stir until the pork is hot. Reduce heat to medium low. Add egg mixture. Cook for about 5 minutes or until the bottom of the omelette is golden brown. Place under a preheated hot broiler for 2 to 3 minutes or until set. Cut omelette into 4 wedges or pieces to serve. Remove from pan and drizzle with warm oyster sauce. Serve immediately.
