"Colourful Corn Saute"

Serving Size: Makes 4 servings

AmountIngredient
2 teaspoonsvegetable oil
1/2onion, diced
2 clovesgarlic, minced
1/2red bell pepper, seeded, diced
1 1/2 cupssliced mushrooms
1 1/2 cupsdrained unsalted canned corn
1/2 teaspoonground cumin
1/2 teaspoonchili powder
3green onions (green parts only), thinly sliced
Salt and pepper, to taste

Preparation Instructions:

Heat oil in a skillet over medium heat. Add onion and garlic and saute for 3 minutes or until onion is soft. Add bell pepper and mushrooms and saute for another 3 to 4 minutes. add corn, cumin and chili powder and saute for another 4 to 5 minutes. Stir in green onion and season with salt and pepper to taste.
