Carolyn's Scalloped Potatoes

AmountIngredient
4potatoes, peeled, cut into thin strips (julienne)
2medium onions, chopped
1 bunchfresh spinach or 1 package frozen chopped spinach, thawed, drained
2 tablespoonsbutter or margarine
1 teaspoonsalt
3/4 teaspoonblack pepper
Dashnutmeg
1 cupgrated sharp Cheddar or Swiss cheese
1/2 cupwhipping cream
1 teaspoondried thyme leaves

Preparation Tips:

1. Rinse fresh spinach well, drain. Tear spinach into small pieces.
2. Saute onions in butter in a skillet until soft but not brown.
3. Layer potato strips, onions and spinach in a greased ovenproof dish. Potatoes should be in bottom and on top. Sprinkle with salt, pepper and nutmeg in between layers.
4. Sprinkle with half the cheese.
5. Bake at 375 degrees for about 30 minutes.
6. Mix whipping cream and thyme. Pour over potatoes.
7. Sprinkle remaining cheese on top.
8. Increase oven temperature to 400 degrees.
9. Bake for another 20 to 25 minutes or until potatoes are soft and cheese on top is melted.
