Corn and Pepper Saute

Serving Size: Makes 4 servings

AmountIngredient
1 eachred and green pepper
1 tablespoon eacholive oil and butter
1 1/2 cupsfrozen corn kernels
1/3 cupfinely chopped green onions
1/4 teaspoonfinely minced garlic
1/4 teaspoonground cumin, optional
Salt and pepper

Preparation Instructions:

1. Cut the peppers into thin strips. There should be about 2 cups.

2. In a large skillet, heat the olive oil and butter over medium heat.

3. Add the peppers, corn and onions.

4. Sprinkle with the garlic, cumin, if used, salt and pepper.

5. Cook, shaking skillet occasionally, 6 to 8 minutes or until heated through and pepper strips are tender crisp.
