"Corn and Pepper Saute"

Serving Size: Makes 4 servings

Preparation Instructions:1. Cut the peppers into thin strips. There should be about 2 cups.
2. In a large skillet, heat the olive oil and butter over medium heat.
3. Add the peppers, corn and onions.
4. Sprinkle with the garlic, cumin, if used, salt and pepper.
5. Cook, shaking skillet occasionally, 6 to 8 minutes or until heated through and pepper strips are tender crisp.
