Surprise Dumpling Stew

16 ounces (2 1/2 cups)dry pinto beans
10 cupscold water
10 cupshot water
1/4 pound (1 cup)salt pork, diced
1 cupchopped onion
1 clovegarlic, minced
1 teaspoonsalt
Dashpepper
1/2 poundground beef
1/4 cupchopped onion
2 teaspoonschili powder
1/4 teaspoonsalt
Dashpepper
1 1/2 cupsyellow cornmeal
3/4 cupall-purpose flour
2 teaspoonsbaking powder
1 teaspoonsalt
1 teaspoonsugar

Preparation Tips:

In a Dutch oven combine beans and the 10 cups cold water. Bring to boiling. Reduce heat and simmer, uncovered, 2 minutes. Remove from heat. Cover; let stand 1 hour. (Or, add beans to cold water; soak overnight.) Drain and rinse soaked beans; add the 10 cups hot water, the salt pork, the 1 cup chopped onion, the garlic, 1 teaspoon salt, and dash pepper to the beans. Cover and simmer for 2 1/2 hours or till beans. are tender. In a skillet cook ground beef and the 1/4 cup chopped onion till meat is browned and onion is tender. Drain off excess fat. Season with chili powder, the 1/4 teaspoon salt, and dash pepper. Cool meat mixture.
To make cornmeal dumplings remove 1 cup liquid from beans; set aside to cool slightly. In a bowl combine cornmeal, flour, baking powder, 1 teaspoon salt, and sugar. Add the 1 cup bean liquid, stirring constantly, till well mixed. Divide mixture into 16 portions. With lightly floured hands, shape each portion around 1 teaspoon meat mixture to form a ball. Mash beans slightly. Stir any remaining meat filling into beans. Drop dumplings onto simmering beans. Cover tightly; cook 30 minutes. Serve in bowls. Makes 8 servings.
