Basic Pasta

AmountIngredient
2 1/3 cupsall-purpose flour
1/2 teaspoonsalt
2beaten eggs
1/3 cupwater
1 teaspoonolive oil or cooking oil

Preparation Tips:

In a large mixing bowl stir together 2 cups of the flour and salt. Push the mixture against the edge of the bowl, making a well in the center. In a small mixing bowl, combine eggs, water, and oil. Stir egg mixture into the flour-salt mixture all at once, mixing till the dry and liquid ingredients are well combined.
Sprinkle the kneading surface with the remaining 1/3 cup flour. Turn dough out onto the floured surface. Knead till the dough is smooth and elastic (8 to 10 minutes). Cover and let rest 10 minutes.
Divide dough into thirds or fourths. on a lightly floured surface roll each third of the dough into a 16 x 12 inch rectangle or each fourth of dough into a 12 inch square. If using pasta machine, pass dough through the machine till 1/16 inch thick. Dust with additional flour, as necessary, to prevent sticking. Cut and shape as desired. Makes 1 pound fresh pasta.
