Split Pea And Chicken Soup

AmountIngredient
4 cupswater
1/2 pounddried split peas
1 teaspoonsalt
1/2 teaspoonchili powder
1/4 teaspoonground turmeric
1/4 teaspoonground cumin
1/4 teaspoonground ginger
1/8 teaspoonpepper
2medium carrots, sliced
2medium stalks celery, sliced
1medium onion, chopped
1clove garlic, chopped
1 1/2 cupscut-up cooked chicken
1medium tomato, chopped

Preparation Tips:

Heat water and peas to boiling in Dutch oven; boil 2 minutes. Remove from heat; cover and let stand 1 hour. Stir remaining ingredients except chicken and tomato into peas. Heat to boiling; reduce heat. Cover and simmer till beans are tender, about 45 minutes. Add chicken and tomato; heat to boiling. 4 servings (about 1 1/2 cups each)
