Mixed Vegetable Pilaf

AmountIngredient
2 tablespoonsmargarine or butter
1 cupsliced fresh mushrooms
1/4 teaspoondried basil leaves, crushed
10 1/2 ounce canCampbell's condensed chicken broth
3/4 cupwater
1 cupregular rice, uncooked
1small zucchini, halved lengthwise and sliced
1/2 cupshredded carrot

Preparation Tips:

1. In 10 inch skillet over medium heat, in hot margarine, cook mushrooms and basil 3 minutes, stirring occasionally.

2. Add broth and water. Heat to boiling. Stir in rice. Return to boiling. Reduce heat to low. Cover; simmer 15 minutes.

3. Stir in zucchini and carrot. Cover; simmer 5 minutes. Remove from heat. Let stand, covered, 5 minutes before serving. Makes about 5 cups or 6 servings.
