Chow Chow

AmountIngredient
30small cucumbers, 4 - 5 inches
1 large headcauliflower, finely chopped
10medium onions, finely chopped
6sweet red peppers, finely chopped
4red pimentoes, finely chopped
1 cupcoarse pickling salt
7 cupsHeinz White Vinegar
3 cupsgranulated sugar
1/4 cupmustard seed
1/4 cupcelery seed
3/4 cupflour
1/4 cupdry mustard
1 teaspoonturmeric

Preparation Tips:

Combine vegetables and salt. Cover with boiling water and let stand 4 hours; drain well. In large saucepan, combine vegetables, vinegar, sugar, celery seed and mustard seed; heat to boiling and simmer 10 minutes.

Make paste by combining flour, dry mustard, turmeric and enough white vinegar to give consistency of a cream sauce. Stir until thickened. Add to vegetable mixture. Pack into hot sterilized jars and seal.

Yield: About 15 pints.
