Chicken & Carrot Veronique

AmountIngredient
1/2 cupunsweetened orange juice
1 tablespooncornstarch
1/4 teaspoonpaprika
1/4 teaspoonsalt
1/8 teaspoonground nutmeg
1/8 teaspoonground ginger
1/8 teaspoonpepper
1 tablespoonhoney
1 cupdiagonally sliced carrot
1/2 cupsliced green onion
4 (4 ounce)boned, skinned chicken breast halves
1/2 cupgreen grapes, halved
 Green onions (optional)

Preparation Tips:

Combine first 8 ingredients in a bowl; stir well. Add carrot and green onions; stir well. Arrange chicken in a shallow 2 quart casserole with thickest portions toward outside of dish. Spoon carrot mixture over chicken. Cover with lid, and microwave at High 9 to 12 minutes or until chicken is done, stirring sauce and turning chicken over halfway during cooking time. Add grapes; microwave at High 30 seconds to 1 minute or until thoroughly heated. Garnish with green onions, if desired. 4 servings.
