Maine Omelette

AmountIngredient
6eggs
4 tablespoonshalf-and-half
Dashsalt
Dashfreshly ground pepper
1/2 poundfresh mushrooms
2 tablespoonsbutter or margarine
2 tablespoonsfinely chopped chives or dill
2/3 poundfresh cooked shrimp

Preparation Tips:

1. Rinse or wipe the mushrooms clean. Slice.
2. Peel the shrimp, if not peeled.
3. Grease a casserole dish with a little butter.
4. Saute the mushrooms in butter for a few minutes until butter stays clear in the pan and almost all dampness from mushrooms has evaporated.
5. Spread mushrooms in an even layer in the greased casserole dish.
6. Sprinkle with chives or dill. Layer half of the shrimp on top.
7. Quickly beat the eggs with the half-and-half. Add salt and pepper.
8. Pour mixture over mushrooms and shrimp.
9. Bake at 325 degrees for about 30 minutes or until set in center.
10. Garnish with remaining shrimp on top. Serve immediately with a green salad and toast.
