Fish Provencal

AmountIngredient
1 1/2 poundscod, seabass or haddock fillets
2onions, thinly sliced
2 - 3 clovesgarlic, minced
2 tablespoonsbutter or margarine
1 stalkcelery
3green onions
1/2 - 1 teaspoonsalt
6whole peppercorns
1bouquet garni (parsley, thyme, bay leaf)
2tomatoes, diced
1/2 - 2/3 cupdry white wine
 Dill or parsley, for garnish

Preparation Tips:

1. Rinse celery and green onion. Slice thinly. Prepare bouquet garni by stringing together parsley, thyme and bay leaf.
2. Quickly rinse fish fillets. Pat dry. Cut into uniform pieces.
3. Saute onion and garlic in 1 tablespoon butter until soft but not browned
4. Saute celery and green onion in remaining butter until just soft.
5. In a skillet or pan, layer vegetables, onion, garlic and fish. Sprinkle with salt. Add peppercorns and bouquet garni. Top with tomatoes.
6. Pour wine over. Bring to a soft boil. Cover.
7. Simmer over low to medium heat for 12 to 14 minutes until fish flakes easily. remove bouquet garni.
8. Serve hot with toasted garlic bread or sour dough bread.
