Minestrone (Crock Pot)

AmountIngredient
3 cupswater
1 1/2 poundsbeef shank
1medium onion, diced
2carrots, diced
2 stalkscelery with tops, sliced
14 1/2 ounce cantomatoes
2 teaspoonssalt
10 ounce packagefrozen mixed vegetables
1/2 cupshredded cabbage
1 tablespoondried basil
1 clovegarlic, minced
1/2 cupvermicelli or 16 ounce can garbanzo beans
1 teaspoonoregano
1zucchini, sliced

Preparation Tips:

Place all ingredients in crock pot except zucchini. Stir to mix thoroughly. Cover and cook on Low 10 to 16 hours (High: 4 to 6 hours). During last hour, remove meat and bones. Cut meat from bones and return to soup with zucchini. Turn crock pot to High and cook one hour. Ladle into bowls and sprinkle with Parmesan cheese. Serve with crusty French bread.
