Herbed Fillet of Beef

AmountIngredient
1 to 1 1/2 poundsbeef tenderloin (fillet of beef)
2 clovesgarlic, cut into thin slivers
2 tablespoonsfresh rosemary
1 tablespoonfresh thyme
1 tablespoonfresh oregano
 Salt
 Freshly ground black pepper
2 teaspoonschopped fresh parsley

Preparation Tips:

1. Preheat oven to 350 degrees.
2. With the tip of a sharp knife, cut slits into the meat just large enough for the garlic. Insert a sliver in each slit.
3. Combine the fresh herbs and rub the mixture into the meat as well as possible.
4. Sprinkle the meat with salt and pepper.
5. Place the meat in a shallow roasting pan, just large enough to hold it comfortably.
6. Bake at 350 degrees for 35 to 40 minutes for rare or 45 to 50 minutes for medium.
7. Remove the roast from the oven. Let it stand 10 minutes before slicing. Remove and discard string and herbs.
8. Cut into thin slices. Sprinkle with parsley.

Good served with roasted potatoes, fresh green salad, and sliced tomatoes.
