Irish Soda Bread

AmountIngredient
3 1/2 cupsall-purpose flour
1/4 cupgranulated sugar
1 teaspoonbaking powder
1/2 teaspoonbaking soda
1/2 teaspoonsalt
1/2 cupraisins
2 tablespoonswhole caraway seeds
4 tablespoons (1/2 stick)unsalted butter, softened
1 1/2 cupsbuttermilk

Preparation Tips:

1. Position a rack in the center of the oven and preheat to 350 degrees. Grease an 8 inch round cake pan.

2. In a large bowl stir together the flour, sugar, baking powder, baking soda, salt, raisins, and caraway seeds. Add the butter and work it in with your fingertips just until blended. Add the buttermilk and stir quickly, just until evenly moistened, to make a sticky dough. Turn the dough into the prepared pan and pat into an even layer. Dip a sharp knife into flour and score a large X over the top to mark dough abut 1/4 inch deep and in even quarters. Bake about 1 hour, until golden brown; a toothpick inserted in the center will come out clean. Turn the bread out, wrap it in a linen towel, and cool it for 6 hours or overnight. You can break the loaf along the farls (the Irish word for quarters) if desired, and then cut it into 1/2 or 3/4 inch slices and toast. Serve hot with sweet butter.

Makes one 8 inch round loaf.
