Chocolate Tiramisu

Preparation Tips:Beat egg yolks and sugar until pale and thick. Beat in cheese and half the rum. In a separate bowl, beat egg whites and pinch of salt until stiff (forms peaks). Gently fold into cheese mixture. Cut each Sara Lee cake into 8 slices and line a 9x13 pan with one cake. Mix coffee with remaining rum, sprinkle half over cake slices, then spread with half of cheese mixture. Repeat, layering the remaining cake, coffee and cheese. Dust with cocoa powder or grated chocolate. Refrigerate 4 - 6 hours or freeze for 2 hours. Cut into squares and serve. Garnish with fresh fruit (optional).
* Substitute 2 teaspoons rum extract and 1/4 cup coffee for 1/4 cup rum.
