Chicken St. Charles

Preparation Tips:Preheat oven to 400 degrees. Place a thin layer of smoked salmon atop of each of the chicken breasts, so that each breast is completely covered with a layer of salmon. If salmon still has skin attached it should be removed and discarded. Place in oven and cook, uncovered, for 10 minutes. Meanwhile, in a small bowl, combine cream cheese, egg white, green onions, parsley, lemon juice, and pepper. Beat until light and fluffy. Remove chicken from oven after 10 minutes and spoon 1/2 of the cream cheese mixture on top of each breast. Lightly spread the mixture with a knife until each salmon topped chicken breast is completely covered with a layer of cream cheese. Place in oven and continue cooking for another 10 minutes. After 10 minutes, set oven to broil and continue cooking until cream cheese topping turns light golden brown. Remove from oven and serve. Serves 2.
