Cucumber Raita

AmountIngredient
1 cupplain low-fat yogurt
1/4 teaspoonsalt
1/4 teaspoongranulated sugar
1/4 teaspoonground cumin
1/2 cupgrated, peeled, seedless cucumber
1 tablespoonchopped fresh coriander or mint

Preparation Tips:

In bowl, combine yogurt, salt, sugar and cumin.
Place cucumber in sieve over bowl; squeeze out liquid.
Just before serving, stir cucumber into yogurt; sprinkle with coriander or mint.
Makes about 1 1/4 cups.
