Orange Pork Tenderloin

AmountIngredient
2 poundspork tenderloin
1/2 cupsoy sauce
1 inch piecefresh ginger, sliced
3 small clovesgarlic
1 cuporange juice
Rind of 1orange, grated or peeled with a potato peeler
1/2 cupdry sherry or water
1/2 cupchicken broth or 1/2 cup water and 1 teaspoon chicken bouillon granules
1/4 cuphoney
1 tablespooncornstarch
1 piecestar anise
 Honey, to brush over meat
2 tablespoonssesame seeds
2oranges, peeled and sliced

Preparation Tips:

1. Place pork into shallow bowl.
2. In blender, combine the soy sauce, ginger, garlic and 1/2 cup orange juice. Puree.
3. Pour half the mixture over the pork. Add the orange peel. Cover. Marinate at room temperature for 2 hours.
4. In small saucepan, combine remaining soy mixture with remaining orange juice, sherry, chicken broth, 1/4 cup honey, cornstarch and star anise.
5. Heat to boiling. Stir and cook 1 minute until thickened. Strain.
6. Lift pork from marinade. Place on roasting rack in pan. Brush with honey. Sprinkle with sesame seeds.
7. Insert meat thermometer into meat. Roast at 425 degrees for 30 to 40 minutes to 150 degrees. Remove from oven.
8. Cover with foil. Let stand 10 minutes. The meat continues to cook.
9. Slice meat to serve. Garnish with orange slices. Strain pan drippings into sauce and serve immediately.
