Perfect Plum Pie

AmountIngredient
1pastry for a two-crust 9 inch pie
1 tablespoonlemon juice
1 tablespoonwater
3 1/2 poundspurple plums, pitted
1/2 cuphoney, warmed
3 tablespoonstapioca
1 teaspoonground allspice
2 tablespoonsbutter

Preparation Tips:

Line 9 inch pie plate with 1 crust.

Mix together lemon juice and water and sprinkle over plums in a large bowl. Mix honey, tapioca and allspice. Toss with plums and allow to stand for 15 minutes, stirring occasionally.

Preheat oven to 425 degrees. Turn filling into dough and dot with butter. Roll out remaining dough and place over filing. Trim, seal and crimp edges. Make several steam vents in top crust.

Bake for 15 minutes, then reduce heat to 350 degrees and bake for another 20 to 25 minutes.
