Cantonese Chicken Salad

AmountIngredient
1/3 cupmayonnaise
1/3 cupsour cream
1 tablespoonsoy sauce
1 1/2 teaspoonsdried dillweed
1/2 teaspoonsalt
1/4 teaspoonpepper
2 cupscooked, diced chicken
10 ounce canwater chestnuts, drained and quartered
1/2 cupchopped green onions
2kiwis, peeled, halved and sliced or 1/2 cup melon cubes or green grapes

Preparation Tips:

In a small bowl, blend mayonnaise, sour cream, soy sauce, dillweed, salt and pepper. In a medium bowl, combine chicken, water chestnuts, green onions and kiwis.

Pour dressing over chicken mixture. Toss gently to coat all ingredients.

Serve on a bed of romaine or other flavored lettuce such as Boston lettuce or escarole. Vegetables such as tomatoes, green peppers or zucchini may be hollowed out and filled with chicken salad. Makes 3 cups.
