Sopa De Guadalajara

AmountIngredient
1 cupdried small red beans, rinsed and drained
 Vegetable cooking spray
2 1/2 to 3 poundsboneless pork shoulder or butt, fat removed and cut into 1 1/2 inch cubes
3medium onions, chopped
2 clovesgarlic, minced
2 teaspoonschili powder
1 teaspoonoregano leaves
1 teaspooncumin seeds
7 cupswater
4 cupsunsalted chicken broth
5 cupsthinly sliced carrots
10 ounce packagebaby corn, thawed
8corn tortillas

Preparation Tips:

Spray a soup pot with cooking spray; add pork and brown on all sides. Lift out and set aside. Add onions and garlic; cook until onion are soft. return pork and any juices to pan; add seasonings, water, broth and beans. Bring to a boil, cover and simmer until meat and beans are tender, 1 1/4 to 1 1/2 hours. Skim fat from soup. Return to a boil; add carrots and simmer until tender. Add corn and heat through. Season to taste with salt and pepper (optional). Serve with tortillas and condiments.
Suggested Condiments: Halved cherry tomatoes; chopped fresh cilantro; plain low-fat yogurt; sliced green onions; lime wedges; green salsa.
