Bran Bread

2 1/2 to 3 cupsall-purpose flour
1 packageactive dry yeast
1 cupmilk
1 cupwhole bran cereal
2 tablespoonshoney
2 tablespoonsbutter or margarine
1 teaspoonsalt
1egg

Preparation Tips:

In a bowl combine 1 cup flour and the yeast. Heat milk, bran, honey, butter, and salt just till warm (115 to 120 degrees); stir constantly. Add to flour mixture; add egg. Beat at low speed of electric mixer 1/2 minute, scraping bowl. Beat 3 minutes at high speed. Stir in as much remaining flour as you can mix in with a spoon. Turn out onto lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough (6 to 8 minutes). Shape into a ball. Place in lightly greased bowl; turn once. Cover; let rise in warm place till double (1 to 1 1/4 hours).
Punch down. Cover; let rest 10 minutes. Shape into loaf. Place in greased 8x4x2 inch loaf pan. Cover; let rise till nearly double (about 45 minutes). Bake in 375 degree oven about 30 minutes, covering with foil the last 15 minutes to prevent overbrowning. Remove from pan; cool. Makes 1 loaf.
