Raspberry Tart

AmountIngredient
Crust: 
2 cupsall-purpose flour
1/2 cupgranulated sugar
1 cupbutter or margarine
1egg
Filling: 
2/3 cupbutter or margarine
3/4 cupgranulated sugar
2eggs
2 tablespoonsall-purpose flour
1 cupground almonds
 Raspberry jam
 Fresh raspberries

Preparation Tips:

1. Combine flour and sugar. With a pastry cutter or two knives, cut in butter until coarse crumbs.
2. Add the egg. Mix until a dough forms. Cover. Chill while preparing filling.
3. For filling, cream butter and sugar. Beat in the eggs. Stir in the flour and almonds, mixing until well combined. Set aside.
4. Reserve 1/3 of dough. Set aside. Press remaining dough into bottom of lightly greased 10 inch cake pan.
5. Spread raspberry jam over dough. Cover with almond filling.
6. Roll out remaining dough into thin strips or ropes. Arrange on top of filling in a criss-cross pattern or around edges of tart.
7. Bake at 350 degrees for about 50 minutes until tart is done and filling is set.
8. Serve with fresh raspberries, if available.
