Orange-Bran Bread

AmountIngredient
1 cupwhole bran cereal
1 cuporange juice
1/2 cuphoney
1/4 cupsugar
2 tablespoonsshortening
1egg
1 tablespoonfinely shredded orange peel
2 1/4 cupsall-purpose flour
2 1/2 teaspoonsbaking powder
1/2 teaspoonsalt
1/2 teaspoonbaking soda

Preparation Tips:

In small mixing bowl combine bran cereal and 1/2 cup of the orange juice; let stand several minutes.
In another mixing bowl stir together honey, sugar, and shortening. Add egg and shredded orange peel; mix well. Stir together flour, baking powder, salt, and baking soda; add to honey mixture alternately with the remaining orange juice, beating after each addition. Stir in bran-orange juice mixture.
Turn batter into two greased 7 1/2 x 3 1/2 x 2 inch loaf pans or one 9 x 5 x 3 inch loaf pan. Bake in 325 degree oven for 45 to 50 minutes for small pans (55 to 60 minutes for large pan) or till wooden pick inserted near center comes out clean. Cool loaves in pans for 10 minutes. Remove from pans; cool thoroughly on wire racks. Makes 2 small loaves or 1 large loaf.
