Chocolate Triangle Cookies

AmountIngredient
Dough: 
1 1/2 cupssifted all-purpose flour
1/4 cupgranulated sugar
1/2 teaspoonsalt
1 cupbutter or margarine, room temperature
3egg yolks
3 tablespoonswhite wine or cider vinegar
3 tablespoonscold water
1 cupsifted all-purpose flour
Chocolate Filling: 
1/2 cupcocoa
6 tablespoonsgranulated sugar
1/4 cupstrong coffee
1 cupfinely chopped toasted almonds
1 teaspoonvanilla

Preparation Tips:

1. In mixing bowl, combine 1 1/2 cups flour, sugar, salt and butter, rubbing butter into flour with fingers.
2. Whisk egg yolks with a fork. Add vinegar and water.
3. Add remaining flour, sifting into egg mixture. Mix together lightly.
4. Combine both mixtures, blending well with fork. Cover. Store in refrigerator several hours or overnight.
5. For filling, combine cocoa and sugar in a bowl. Blend in coffee, almonds and vanilla, mixing well.
6. Pinch off walnut-size balls of dough, leaving remainder in refrigerator. Roll out on well floured board to 2 1/2 inch round.
7. Place a spoonful of filling in center. Pinch sides together, forming closed triangle. Seal well.
8. Place on ungreased cookie sheet.
9. Bake at 375 degrees for 25 minutes or until golden brown. Some of the cookies will open, revealing chocolaty filling.
10. Transfer to wire rack to cool.
