Soho Potatoes and Carrots

AmountIngredient
2large carrots, peeled, cut into 3/4 inch pieces
3large potatoes, peeled, cut into 3/4 inch pieces
 Water
 Salt
3 tablespoonsunsalted butter
1/2 cupwhipping cream
3 tablespoonschopped fresh dill or parsley
1 tablespooncapers, drained, optional
 Salt, to taste
 Pepper, to taste

Preparation Tips:

1. Heat a large pan of water to boiling. Salt the water. Add the carrot and potato pieces.
2. Cook vegetables until tender but still crisp, about 15 minutes.
3. Drain. Cool under running water. Set aside.
4. Melt the butter in a skillet over medium heat. Add the carrots and potatoes. Saute for 5 minutes.
5. Stir in the cream, 1 tablespoon at a time, over medium heat, waiting for each addition to be absorbed before adding the next.
6. Stir in the dill or parsley, capers, if used, and salt and pepper to taste.
7. Serve immediately.
