Herb Vinegar

AmountIngredient
2 cupswhite cider or wine vinegar
1/2 cupchopped or bruised fresh herb or a combination of herbs

Preparation Tips:

In a non-corrodible saucepan, bring vinegar to a simmer. Remove from heat. Add herbs, cover and set aside for 4 to 5 days, shaking occasionally. Strain into a clear, sterilized bottle. Add a fresh sprig of the herb. Cork tightly. Refrigerate or store in a cool, dark place for 2 months. Makes 2 cups.

Note: Onion, garlic, mustard seeds, bay leaf or a whole chili pepper can be added for extra flavor.
