A Good Basic Meat Sauce

Preparation Tips:1. Finely chop the onion. Core, seed, and finely chop the peppers or peel and finely chop the carrots. If using fresh pork or poultry or ham, cut into 1/2 inch cubes.
2. Heat the olive oil in a deep large skillet over high heat. Reduce the heat to medium, add the onion and peppers or carrots and saute, stirring on occasion, until the vegetables soften a bit, about 5 minutes.
3. Add the meat and saute, stirring constantly, until the meat is cooked through, about 5 minutes. Add the tomatoes with their juices and break them up against the side of the skillet with a wooden spoon.
4. Add the oregano, cover the skillet, and simmer over low heat 20 to 30 minutes or as long as it takes to boil the water and cook your pasta or grain. Stir the sauce every now and then to make sure it's not sticking to the bottom of the pan. When the sauce is done, season it to taste with salt and pepper. (If you wish, puree it in a food processor for a smooth texture.)
